If you’ve never tried Filipino food and are up for just trying something different, JR Martin and wife Chiho just opened an excellent spot in North Hollywood. Tatang uses premium ingredients for twists on Filipino classics, including free-range chicken, heritage pork and organic eggs.
Beef Brisket Ma-Mi is a hearty noodle soup featuring tender fat-rimmed brisket slices with bok choy, charred carrot chips, crispy garlic, clipped chives and a choice of egg or rice noodles. Request spicy vinegar or Sriracha to boost flavor.
Sisig, typically a sizzling stir-fry that incorporates chopped pork jowl and ear, gets an enlightening chicken substitute. So do lumpia: cigar-sized Filipino egg rolls. You’ll also find pork and beef ribs lacquered with banana BBQ sauce—a play on the Filipino passion for banana ketchup made with mashed bananas, sugar, vinegar and spices.
Fun, unconventional dishes include earthy ube (purple yam) fries served with tangy calamansi dressing, made with a type of citrus popular in the Philippines, and longanisa (Filipino sausage) meatballs crafted with pork and shrimp.
For dessert, consider ube ice cream with house-made pan de sal biscocho—basically Filipino biscotti.
