Salt & Straw Features Guest Chef Collaboration Flavor Series for June
Salt & Straw chef Tyler Malek collaborated on ice cream flavors with five of the West Coast’s best chefs, which are available for the entire month of June in Studio City and other L.A. scoop shops.

Good news for people who like to get really adventurous with ice cream. Salt & Straw, the endlessly creative Portland-based ice cream company from Kim Malek and chef/cousin Tyler Malek, is scooping five flavors that we’re pretty sure you’ve never tasted before. It is all part of a Guest Chef Collaboration series that runs in all Salt & Straw shops through June 28.
For the special series, Tyler collaborated with five of the West Coast’s best chefs from Seattle in the north all the way south to San Diego. In L.A., Tyler worked with Sara Kramer and Sarah Hymanson, chef-owners of Kismet and Madcapra.
At Kismet, the duo’s become well-known for a Persian-inspired dome of “jeweled crispy rice” filled with egg yolk and topped with currants and pumpkin seeds. Salt & Straw’s Jeweled Brown Butter Rice Gelato incorporates pumpkin seed caramel and verjus-cured currants.
The other four other ice cream flavors emanate from these chef collaborations:
- Traci Des Jardins (Jardinière in San Francisco): Duck Crackling with Cherry Preserves with Duck Fat Ice Cream & Honey Gastrique
- Renee Erickson (Walrus & The Carpenter in Seattle): Ras el Hanout & Pickled Rose Petal Jam
- Brian Malarkey (Herb & Eatery in San Diego): Roasted Beets & Humboldt Fog with Apple-Beet Jam and Candied Walnuts
- Gabriel Rucker (Le Pigeon in Portland): Tokyo PB&J with Japanese Whiskey-Spiked Strawberry Jam, Peanut Butter and Caramelized White Chocolate Feuilletine in Toasted Rice and White Soy Ice Cream
One more sweet bonus: a portion of proceeds from this series benefits No Kid Hungry.
