Tonight is the first night of Hanukkah! Did you buy your latke (potato pancake) ingredients yet? If not, or if you're not in the mood to deal with mess, have a ton to make or just need them in a pinch, I found the best frozen variety to solve the problem: LA-based Linda’s Gourmet Latkes. Instead of tasting like lumps of fried mashed potatoes, Linda’s are crispy and crunchy as a result of being flash-frozen. Plus they are super-easy to make. Just four to seven minutes in the oven is all it takes.
They come in four sizes: bite-size (48 per pack); large (24 per pack); extra large (14 per pack); extra, extra large (six per pack). There is a “latke calculator”on the website to figure out your serving amount needs. Flavors include original, sweet potato, green onion, Southwest, artichoke, zucchini and curry. There’s even gluten-free, vegan and heart-shape. To give the latkes a "gourmet twist," check out the bottled toppings that include various types of caviar and crème fraîche
