Barrel & Ashes Chef Timothy Hollingsworth on New Otium Restaurant
Valley chef Timothy Hollingsworth is expanding downtown with The Broad museum’s Otium restaurant.

Timothy Hollingsworth, co-executive chef (with Rory Hermann) of Studio City hot spot Barrel & Ashes, is adding to his LA resume with his new position as executive chef for Otium restaurant at downtown's The Broad contemporary art museum, opening September 20 (Roy will be culinary director). The Sauce caught up with Timothy last week at a housewarming party celebrating a new space for Bill Chait's Sprout LA Restaurant Group, which includes Barrel & Ashes, Otium and many others.
Along with other Sprout LA chefs, Timothy, a former French Laundry chef, offered tastes of his creations. While other chefs put out signs describing their wares, Timothy's little sign read: "Don't Ask." Never good at taking direction, The Sauce asked anyway and discovered that his lovely morsels included sea urchin, fresh herbs and pistachios.
We also grabbed a quick comment from Chef Timothy on what to expect at Otium. While not yet announcing a menu, he says he wants Otium to represent "modern fine dining," which will be "approachable and innovative," casual enough to attract the downtown neighbors but eclectic enough for the international crowd the museum is expected to draw. Of course, he adds, this approachable menu will also provide elegant offerings worthy of special occasions.
