BBQ culture exists all over the globe, and Boneyard Bistro chef-owner Aaron Robins sets out to showcase some of the more interesting iterations with his “World BBQ Tour” at the eatery. The event convenes once per quarter and has already educated diners on traditions from places like South Africa, Korea and Hawaii. On June 28 Boneyard Bistro and executive chef Erica Abell celebrate BBQ from Bali, a tropical destination that’s part of Indonesia’s island chain.
The a la carte menu runs six dishes deep and stars meats like eight-spiced BBQ spare ribs, babi guling (roast pork belly with kaffir lime and vinegar chili sauce) and tuna sambal matah (seared tuna steak with ginger rice and papaya-long bean salad). If you’re not a meat eater, consider fried ramen cakes with soft-boiled quail eggs, lemongrass oi, and fried garlic. Dishes range from $15 to $32.
Erica Abell masterminded this installment of the World BBQ Tour. She feels that Bali’s cuisine doesn’t get the acknowledgement and respect it deserves. She is also hoping to vacation there by the end of the year. Consider this meal a culinary down payment.
