Talk about local produce.
Tender Greens’ 19th location, recently opened at The Village at Westfield Topanga, looks a little different from the restaurant’s other locations. Alongside outdoor seating, look for tall towers studded with burgeoning plant life. This new experiment in “vertical farming” will supply the restaurant with some of the produce used on the menu. From tower to table, you might say.
Tender Greens says that each drought-friendly tower—installed and maintained by Green City Farms—uses up to 95% less water and 90% less land than traditional growing methods. So far the towers can only be found in Woodland Hills and will come to Torrance when Tender Greens opens its 20th location at the Village Del Amo. (Similar towers can be seen from Ventura Boulevard on the Studio City location.)
And you just might find some of this very local produce included in Tender Greens’ new veggie-friendly menu, including a crispy falafel protein option and seasonal plant-based sides such as Wild Mushroom & Grain Salad and Roasted Autumn Squash.
You might not find all of these ingredients on the vertical farm, but they're in the cooking at Tender Greens.
